Countdown to Game Day! Score Big with Deviled Eggs
Classic deviled eggs: Mash yolks of 12 hard-boiled eggs with 1/4 cup mayonnaise, 3/4 teaspoon Dijon mustard, 1/2 teaspoon lemon juice and salt and pepper to taste. Pipe or spoon the mixture into the egg whites. Just before serving dust the eggs with a little Spanish sweet, smoked paprika.
Ravens kicked-up style: Mash yolks of 12 hard-boiled eggs with 1/2 cup mayonnaise, 2 teaspoons Dijon mustard, 1 teaspoon lemon juice, 3/4 teaspoon Creole seasoning and several dashes hot pepper sauce. Gently mix in 11/2 cups chopped cooked shrimp, 1/2 cup finely chopped green bell pepper and
2 tablespoons crumbled, crisp-cooked bacon.
Season to taste with freshly ground black pepper. Pipe or spoon the mixture into the egg whites. Just before serving dust the eggs with a little Spanish sweet, smoked paprika.
49ers fresh gourmet style: Mash yolks of 12 hard-boiled eggs with 2/3 cup crumbled goat cheese, 1/4 cup mayonnaise, 1/4 cup basil pesto and 1 teaspoon Dijon mustard. Season to taste with salt and freshly ground black pepper. Pipe or spoon the mixture into the egg whites. Just before serving dust the eggs with a little Spanish sweet, smoked paprika.
New Orleans muffaletta style: Mash yolks of 12 hard-boiled eggs with 1/3 cup mayonnaise, 3/4 teaspoon Dijon mustard and 1/2 teaspoon white wine vinegar. Gently mix in 1/2 cup chopped olive relish (marinated olives, provolone cheese, pepperoncini and/or artichokes) and 1/4 cup chopped salami.
Season to taste with salt and freshly ground black pepper. Pipe or spoon the mixture into the egg whites. Just before serving dust the eggs with a little Spanish sweet, smoked paprika.
A devilishly clever idea You don't need a pastry bag to fill deviled eggs. Place the yolk mixture in a resealable plastic bag and squish all of the ingredients towards one corner. Snip a piece from the corner- a larger piece for chunkier fillings-and squeeze out a bit of yolk mixture into each of the egg whites.
