Quick and Easy Holiday Brunch
Urbandale, IA- At times the holidays can seem so stressful. Rushing from store to store to purchase the perfect gift, dealing with crowds and traffic, decorating the home, and preparing an exquisite holiday brunch. This year, lighten the load, and prepare a quick and easy holiday brunch the night before.
Slow Cooker Breakfast Casserole
1/2 lb. pork sausage or 12-15 sausage links
1 C. milk
salt & pepper, to taste
1 pkg. (2lbs) potatoes O'Brien (hash browns with diced onions and peppers)
1 10 oz. can Rotel diced tomatoes and green chilies
2 cups of cheddar cheese, shredded
Brown sausage over medium heat; drain. Remove sausage and set aside. In a large bowl, beat eggs together with milk. Add salt and pepper. Stir in cut up sausage, potatoes O'brien, tomato, and cheese. Spray crock-pot with cooking spray and pour egg mixture in. Cook on low heat for 6-8 hours. Optional: top with sour cream or salsa.
Pecan Bread Pudding
2 cups granulated sugar
5 large beaten eggs
2 cups milk
2 tsps. pure vanilla extract
8-10 cups cubed Italian bread (allow to stale overnight in a bowl)
1 cup packed light brown sugar
1/4 cup (1/2 stick) butter, softened
1 cup chopped pecans
For the sauce:
1 cup sugar
1/2 cup of butter melted
1 egg beaten
2 tsp. vanilla
Preheat the oven to 350 degrees. Grease a 13 x 9 baking dish. Mix together granulated sugar, eggs, and milk in a bowl; add vanilla. Pour over cubed bread and let sit for 10 minutes. In another bowl, mix and crumble together brown sugar, butter, and pecans. Pour bread mixture into prepared pan. Sprinkle brown sugar mixture over the top and bake for 35-45 minutes, or until set. Remove from oven.
Combine the sugar, butter, egg and vanilla in a small saucepan. Cook over medium heat until sugar melts. Pour over warm bread pudding
Serve eggnog with the breakfast casserole and bread pudding and wa-LA, brunch is served!
